1 x small Green Pepper, sliced in strips
1 x small Yellow Pepper, sliced in strips
1 x large Portabello Mushroom, sliced in strips
Half large Onion, sliced in strips
1 x Tbs Fajita Seasoning Mix
4 x Large Tortilla Wraps of choice, warmed
60g Super Green Pesto
120g Vegan Mayo of choice
2 x Spring Onions, cut into batons
Crunchy lettuce like Romaine or Iceberg
1. Heat wide pan to hot. Add a splash of olive oil & stir fry sliced veg for 5 mins.
2. Add 1 Tbs Fajita Seasoning Mix and continue frying for an additional 3 mins.
3. Combine mayo with pesto and mix well.
4. Spread warmed wraps with Super Green Mayo, lettuce of choice and spring onions.
5. Assemble stir fried veg on top and fold to secure contents.
Add warm brown rice for a filling Burrito…….
Fajita Seasoning Mix (store in an airtight jar)
1.5 tsp Chilli Powder
1.5 tsp Ground Coriander
1 tsp Cracked Black Pepper
1 tsp Sea Salt Flakes
2 TBS Sweet Smoked Paprika
1 TBS Ground Cumin
1 TBS Garlic Powder
1 heaped TBS Dried Oregano
