Dressing – combine the following ingredients
30g Super Green Pesto
1 clove Garlic, finely chopped
2 x Tbsp. EV Olive Oil
2 x Tbsp. of toasted Pine Nuts
3 large Baking Potatoes or Sweet Potatoes
EV Olive Oil
Sea Salt & freshly milled Black Pepper
Green salad ingredients of choice.
Pre heat oven to 220*
1. Make the dressing and leave aside for flavours to merge.
2. Cut potatoes lengthwise into thick slices. Brush with oil on both sides, sprinkle with salt and pepper and place on a baking sheet, lined with parchment or well oiled.
3. Bake in a hot oven for 15mins or until tender and golden on the outside.
3. Remove from oven and arrange on plate. Pour dressing over and garnish with a green salad.
Serves 4 as a tasty and filling lunch. Enjoy……
