Delicious Salomon with cream cheese, Harissa Sauce & Savoury Rice

2 x thick Darnes of Salmon
2 x Tbs Cream Cheese of choice
2 x Tbs Veggie Earth Harissa Sauce
1 x Lemon
2 x Spring Onions, chopped
Fresh Coriander & Flat Leafed Parsley, chopped.
Cayenne Pepper
Melted Butter
Sea Salt Flakes & Freshly Milled Black Pepper
Cooked Rice, of choice.

  1. Make a deep slit in the salmon and fill each pocket with 1 x Heaped Tbs Cream Cheese and 1 x Heaped Tbs Harissa Sauce.
  2. Line roasting pan with greaseproof paper and place salmon in pan, squeezing some lemon juice over salmon and sprinkling with sea salt, freshly milled pepper and a little cayenne.
  3. Add a few slices of lemon and onions to the roasting pan with a little melted butter.
  4. Cover pan with foil and cook slowly in a medium hot oven for 20 mins.
  5. Cook rice and drain. While still warm add the zest of half a lemon cut into julienne strips, chopped herbs, spring onions, salt, pepper and a drizzle of extra virgin olive oil. Mix together well.
  6. Plate up rice and salmon, garnishing with some sprigs of fresh coriander and a dusting of cayenne pepper.
