3 minutes Crushed Potatoes with Green Pesto

  1. Baby Salad Potatoes boiled in salted water and flattened slightly with a fork, when cooked.
  2. Add back into the still warm pot they were cooked in, adding a little veg stock, salt & pepper plus 2 TBS of Pesto Verde.
  3. Swirl around pot to combine adding some freshly chopped basil & flat leafed parsley for flavour.
  4. Serve in a warm bowl with a spring of Basil to garnish.
  5. Serve as a potato salad with a bbq or to accompany any dinner combination.
